Scallop Linguine. The yummiest scallop pasta you will ever eat!
INGREDIENTS:
Lemon juice of 4 lemons
2 cups white wine
2 red chilli’s
500g scallops
1 packet linguine
Bunch rocket or asparagus
Fetta
2 cloves garlic
1-punnet cherry tomatoes
METHOD:
Fry garlic in olive oil, add lemon juice, wine, chilli’s and tomatoes
Pop in scallops and fetta for 2-3 mins
Pop in rocket or asparagus for 1 minute
Drain linguine and stir juices and sauce into pasta, stir well, add salt and lots of cracked pepper. Serve with salad and crusty bread.
