Chilli Lime Prawns

This dish works beautifully with a) ready-cooked prawns or b) raw/green prawns.  The method differs slightly but the ingredients remain the same.

INGREDIENTS:

1kg of Fresh Prawns (peeled, with tails intact)

Juice of 2 limes

1 clove of garlic (finely sliced)

1 small red chilli (more if you like it spicy!) – finely sliced

1/4 cup coriander leaves (chives or mint can work too)

4 kaffir lime leaves (stem removed – VERY finely sliced)

5cm piece of ginger (peeled and grated)

1 tablespoon of palm sugar (chopped)

1 stem of lemongrass (bruised & then finely sliced)

Secret ingredient – 125ml of Neil Perry Fresh – Soy & Chilli Dressing*

 

METHOD:

Add lime juice, garlic, chilli, lime leaves, ginger, palm sugar & lemongrass to the Soy & Chilli Dressing.  Then:

 

a)  Serve immediately with coriander for garnish (for pre-cooked prawns)  OR

b)  Cook on the barbecue for a couple of minutes on each side, garnish and serve (for raw/green prawns)

 

Prawns can be served ‘as is’ but are particularly good with a mango & avocado salad – EMAIL ME if you would like the recipe.

*This dressing can be found in the fruit and vegetable section of most Woolworths stores.  It is a well balanced and conveniently packaged option that will save you having to transport and store several liquid ingredients.  I like to tip half the bottle into a smaller container and leave it at home in the fridge for another time.  On the day I want to make the prawns I chop and add my fresh ingredients to the bottled dressing and give it a shake.  It really brings the beautiful fresh prawns to life!
