Avocado Salsa Oyster topping, guacamole topped oysters. This salsa is also delicious with corn chips.

1 large avocado, seeded, peeled and finely diced 1 small red onion, peeled and diced 1 vine ripened tomato, deeded and diced, Zest and juice of 1 lemon 2tbs coriander leaves, chopped 1tsp olive oil Tabasco sauce to taste
Combine all ingredients in a mixing bowl and refrigerate until required. Place on oysters and season to taste.
